Today has been filled with Christmas stuff, good food, and temper tantrums galore! We did a little shopping this morning. I can now say that I am totally finshed with my Christmas shopping!!! Even stockings. :) I have never gotten finished this early! I have all my gifts wrapped with the exception of a couple that I am waiting on to arrive. Sooo glad I am done.
This afternoon Chris and I totally had the urge to make Christmas candy. I found this super easy recipe for "Christmas Crack" and if I say so myself, it turned out great. The best way for me to describe how it tastes is like a Skor bar. I will post the recipe at the end of this post. You know I only like EASY recipes, and this is one of them!!!
As I said before, Dylan was in quite the mood today. Throwing little fits was kinda his game today. So, we decided we would drive around looking at Christmas lights to de-stress. He only got upset once on our trip ;) We found this one house that synchronized the lights with Christmas music. It was awesome! I loved it. On the way back, on a whim, Chris and I stopped at Jack's for dinner.
We never, ever eat at Jack's for dinner. It was really good though! We just sat in the car and ate and talked like old times. I really enjoyed it. Sometimes it is so hard for Chris and I to just get a minute alone to talk and relax. We do get to eat together at lunch a lot but that is only 45 mins. and we have to rush back to work. We pretty much spend that time talking "business". Anywho, leaving the tangent....here is the recipe for the candy! You will love it if you like toffee at all!
Christmas Crack
1 sleeve saltine crackers
1 - cup butter, not margarine
1 - cup light brown sugar
1 - 12 oz package chocolate chips
1 - cup chopped pecans
Preheat oven to 400 degrees. Line a rimmed baking sheet with foil. Lay crackers out on sheet in one layer. In a medium sized saucepan, melt the butter and the brown sugar. Stir often and bring to a full rolling boil and boil for exactly 3 minutes.
Pour over the saltines and bake for 5 minutes. Sprinkle with chocolate chips and wait until they are almost melted then spread evenly all over all the saltines. Sprinkle on the nuts all over the top. Refrigerate for two hours and then break up into pieces.
